Balsamic Baked Chicken & Pears
Balsamic Baked Chicken & Pears Ingredients (8 Servings)
- 8 chicken drumsticks
- 4 pears, cored and sliced
- 2 tbsp. extra virgin olive oil
- 1 tsp. sea salt
- 2 tbsp. balsamic vinegar
- 1 tsp. thyme
- 1 tsp. fresh cracked pepper
Preheat the oven to 450°F.
Place the cored and sliced pears in a large baking dish, in a single layer.
Combine the extra virgin olive oil, thyme, sea salt and fresh ground pepper in a medium-sized bowl.
Spoon half of the mixture in the bowl over the pears in the baking dish.
Cover the baking dish tightly with foil.
Bake the pear mixture for about 10 minutes.
In the Meantime…
Place the 8 chicken drumsticks in the remaining oil mixture, and coat the drumsticks on all sides.
Remove the pear mixture from the oven.
Uncover the pear mixture and arrange the chicken drumsticks on top of them.
Drizzle the chicken and pears with the balsamic vinegar.
Bake the chicken and pears uncovered for an additional 20 minutes or until juices from the chicken are running out clear and the chicken is done. (internal temp 170°F)
Remove the large baking dish from the oven and allow the balsamic baked chicken and pears cool before plating and serving.
